Savory Vegetable Soup


To give this recipe the plain old name of "vegetable soup" belies its truly unique and hearty flavor. Consider three slightly unusual ingredients: sweet potatoes, celery seed, and cumin. Amounts of the latter two can be adjusted to suit your taste as you make this your own dish. While this recipe makes several servings, you'll likely find most folks eating two or three servings each.

Ingredients:
    1 large onion
    ¼ cup butter or margarine
    3 medium sweet potatoes, peeling and chopped
    3 medium zucchini, chopped
    One bunch broccoli, chopped
    2 quarts chicken broth
    2 medium potatoes, peeled and shredded
    2 teaspoons ground celery seed
    2 teaspoons ground cumin
    1 teaspoon pepper
    2 cups light cream

(Makes 4 quarts - 12 to 16 servings)

Preparation:

  1.  In a large pot, sauté onions in butter until transparent. Then add the sweet potatoes, zucchini, and broccoli. Continue to sauté for another 5 minutes.
  2. Add the chicken broth and simmer for a few minutes. Then add the shredded potatoes, and the seasonings and cook for another 10 minutes until vegetables are tender.
  3. Stir in the cream and heat through but do not allow to boil.
